Cauliflower Gnocchi


Hidden veggies are my jam. These fluffy gnocchi take a familiar favorite but include cruciferous cauliflower for phytochemicals, vitamins, minerals, and fiber that have been shown to lower your risk of cancer and stop the growth of cancer cells for tumors.


Ingredients:

4-5 cups of cauliflower 2/3 cup of flour (I used cassava and almond) 1 teaspoon sea salt Olive oil (optional)

1. Using a food processor, crumble the cauliflower. 2. Cook the cauliflower and squeeze ALL water out of it with a towel. 3. Put back into the processor, along with the flour and sea salt. 4. Blitz until creamy, then roll out onto floured surface or parchment paper. 5. Form a ball and cut into quarters. Work with each quarter for ease. 6. Roll into a rope. Score the rope with a fork and cut into segments gnocchi sized. 7. You can boil the gnocchi at this point. I popped mine into the air fryer, drizzled with oil.




Sauce: Ghee 4 tablespoons Sage leaves - as many as desired, I used about 10

1. Heat the ghee. 2. Fry the leaves in the ghee. 3. Pour atop crispy gnocchi.
