Crispy Chicken!

Hubby and son love this meal staple and I do too, for its incorporation of nuts and seeds and lean protein of organic chicken. The simplest version requires four ingredients: chicken, nut flour, egg, and panko. Derivatives can be made gluten free and much nuttier and seedier!





Ingredients: Chicken scallopini Eggs Nut Flour (such as almond) Breadcrumbs Mix of sprouted spelt and gluten free panko for texture but feel free to improvise Seeds of choosing (sesame, flax, chia, hemp) Oil for pan frying such as extra virgin olive oil







Dredge the chicken in the nut flour. Here is where to incorporate the seeds.

Coat in beaten egg, then the breadcrumbs.

Pan fry in oil.
