Eggs in Purgatory


Eggs in purgatory are poached eggs in a spicy tomato sauce. Especially on keto, paleo, or whole 30, the value of eggs 🥚 rises. High in lean protein, cost effective, and fast and easy to cook. Omit the spice for kiddos. 

This recipe checks all the boxes with speed and ease, low cost, and hits all the macrobiotic groups with quality protein, carbohydrates, and fat. Eggs are sources of selenium (thyroid health), vitamin D (mood booster), B6 and B12 (energy), and zinc, iron, and copper.




Ingredients: Oil such as extra virgin olive oil or avocado oil Garlic Onions Tomatos (non BPA canned and strained) spices/herbs such as basil and chilli for adults

sea salt Eggs Optional: Crusty bread for sopping up sauce


1. Saute onions and garlic in oil 2. Pour in tomatos and simmer until soft 3. Season with herbs 4. Make wells in the sauce. Crack an egg in each and let cook until yolk is softly poached (until desired doneness) 5. Season with sea salt and enjoy!
