The fiber and antioxidants especially anthocyanins and beta carotene (vitamin A for eyes) help protect the body against free radical damage (which hurt DNA and increase inflammation) and chronic illness like cancer.
1/2 cup sweet potato
1 egg
Mix ins such as chocolate chips, blueberries, vanilla, coconut, nuts...
Mix.
Pour batter into pancake moulds.
